Butternut Squash soup was on the menu for the BOND lunch today. I thought I would be able to cut and cube the squash without pre-cooking, but about 5 minutes into the process I realized that wasn’t going to work. I knew I could cook them in the microwave, but I didn’t know how long it would take. I quickly checked the web and saw that I should cook them on high for 5 minute intervals until they were done. I cut the four squashes in half and each one took two rounds at 5 minutes each.
Once I got everything into the soup pot I needed to bring it to a boil and then let it simmer. I didn’t want to burn the soup so I set my timer and gave it a stir every 5 minutes. It took almost half an hour of cooking and stirring before everything was cooked.
I made a quick trip to the Post Office this afternoon to mail Kathryn’s mitts to her. I finished up a scarf this afternoon and I will get a parcel off to Elizabeth tomorrow before sewing. I have all the bits and pieces gathered together for my last Advent Calendar and, if I get busy tonight, I might be able to have it ready for the mail tomorrow as well. I’ve decided the best way to clean up my sewing room is to get my Christmas parcels wrapped and in the mail.
I’m not sure what I will work on tomorrow at the bee. I have a couple of projects with deadlines so I really should get started on them. Both require some prep work that would be better done at home. It sounds like a busy night ahead.
