It really wasn’t my turn for BOND today but since I am their one and only volunteer at the moment I said I would come in and do the lunch. I knew that one of the coordinators wasn’t available today so I felt I should make an extra effort. On the menu was quiche and salad.
I have made quiche for the ladies before, but it was a bit of an issue getting the larger pies cut and served without having them fall apart. I thought today I would go for individual quiches. Sadly, the grocery store only had either the large pies or the mini tarts so I made 54 mini quiche. I thought spinach salad would go well with the quiche (at least it does in restaurants) so I added some strawberries, feta cheese and poppy seed dressing.
There were a few quiche left to take home, but I had to make three batches of salad. It was a big hit. I don’t always have a hit and I’ll have to be careful that I don’t make it too often so it stays popular.
Today was craft day, which I don’t usually like because the ladies tend to stay well past the time we should be cleaning up. The craft today was making recipe books and the coordinators had printed some recipes for the ladies to add to their books. I was in the kitchen cleaning up when I was interrupted. The ladies wanted to know if the beef and barley soup recipe going into their book was the one I made a couple of week ago. It wasn’t, although I had provided it to the office, and the ladies said they wanted my recipe. Coming up in the next couple of weeks is Corn Chowder – wait until they taste Aunt Gertie’s (or Jackie’s) recipe!
I managed to get a bit of quilting done today. I had already decided that if I did the lunch today I’d have to make up for the lost time by staying home from the bee tomorrow. Ruby doesn’t travel and I’m short on time to get these projects finished.
