The baking is done

I was in the middle of making Chocolate Shortbread this morning when our friends returned out coffee pot. While we had coffee, Judy and I discussed the problem; the dough was more like powder than dough. Judy’s suggestion was to add more butter. I did, and they mixed up well but they were very crumbly coming off the cookie sheets. There are a couple of things I think I did wrong. I should have creamed the butter before adding the dry ingredients (I sifted my dry ingredients and added the butter) and I think I pressed the cookies too thin. I have a lovely cookie press that Stacia gave me several years ago but to get the full impression on the cookie they were quite flat. Oh well, the crumbs taste good.

After that disaster I was still willing to move along. I made Whipped Shortbread, Butter Tarts (Kathryn’s favourites) and a chocolate square that I make for Christy. I had Ginger Snaps on my list but decided we didn’t need them; besides the fridge was getting full. I will make some Nuts and Bolts and my Tourtieres tomorrow. There are a few things I hope to make with the kids when they are here (Cookie Pizza), and I’ll make a 7-Layer Dip for Dave.

Good news today – our friends, Geoff and Brenda, have invited us to their home for Christmas dinner. I was asked to bring a bean salad and I found a new recipe – mixed greens, green beans (cooked), almond slivers, dried cranberries and feta cheese. It sounds good and, hopefully, it will look festive.
