I was in charge of lunch at BOND today, although I didn’t pick the menu – Greek salad, Tzatziki and pita bread. There is a new coordinator for the program and by the time we had a get-to-know-you chat I was a little late in starting out. I questioned whether we should have a plate of veggies considering all the veggies in the salad, but the answer was yes. They also decided to add some hummus to the menu.
I had a recipe for the tzatziki, but there was no way I could wing making hummus. To be honest I wouldn’t know where to start. I bought a small container of lemon-dill hummus from the deli and the ladies gobbled it up. When I served lunch everyone was amazed that I made the tzatziki from scratch – silly me didn’t know buying it was an option! It turned out well, although I’d add a bit less yogurt next time because it was a bit runny. We were laughing at the end of the day because we all smelled of onion and garlic.
I had a doctor’s appointment after BOND but I had time to drop a few things off at the Economy Shop before checking in at the clinic. I waited for quite some time – I was left behind there once so I was watching the clock to make sure the doctor didn’t get out before me! Once I got to her office I sat and waited even longer.
When the doctor finally got to me she apologized and said they had an “incident” at the clinic and she was running an hour behind. I could have rescheduled but I said if it was okay with her I’d just as soon go ahead. I’m healthy – at least until all the lab tests come back. This was just a routine check-up and I really don’t think the lab results will prove otherwise.
I still have to pack up my supplies for the bee tomorrow – it is the first Project Tuesday of the year and Valentine’s is the theme. And then I’ll start stitching on to my very last flower block.
