A lazy day

We started our day with a lovely walk along the sea wall. It’s been awhile since we were down there and we were happy to see two eagles welcoming us home. The tide was out and one of them was sitting on a rock right down by the water – we don’t see that very often. The other was sitting in a tree near to it’s nest.

I made another trip to the grocery store today (this buying as you need it is going to take some getting used to). I planned a Greek Salad for lunch but I neglected to buy olives yesterday. I found a new recipe for the dressing and I was missing red wine vinegar. I wanted to make Panna Cotta for dessert and I needed some ingredients for that.

Panna Cotta was one of my favorite Italian desserts and one of the women in our tour group said it was really easy to make. I found a recipe online and it was easy to make. It tasted okay, but it didn’t come out of the mould as well as I would have liked. I’ll have to keep practicing because we want to cook an Italian dinner for our friends who looked after the house while we were away.

Did I mention I walked to the grocery store? I mention it now so I won’t feel badly when I admit to napping the afternoon away. And I may as well also admit that I haven’t done much since I got up! I have some projects that need to be finished ASAP, but I think for tonight I’ll get out my book and see if I can make some progress on it.
